    Wash and dry all produce. Halve, peel, and thinly slice shallot ; chop a few slices into tiny pieces to use as the "shallot" for sauce. Mince or grate garlic . Roughly chop pistachios . Trim and halve mini cucumber lengthwise; thinly slice into half moons. Halve grape tomatoes lengthwise. Zest and quarter lemon .

    Melt butter in small pot over medium-high heat. Add the minced shallot, half the garlic, half the pistachios (save the rest for serving), half the shawarma spice blend , and a pinch of salt . Cook, stirring, ⏱️ 1 minutes . Stir in basmati rice , veggie stock concentrate , water , and a big pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender, ⏱️ 18 minutes . Keep covered off heat until ready to serve.

    In a medium bowl , combine cucumber, tomatoes, and as much sliced shallot as you like. Toss with a drizzle of olive oil , a big squeeze of lemon juice, a pinch of lemon zest, salt, and a pinch of pepper . In a small bowl , combine sour cream with the remaining garlic to taste. Add water 1 tsp at a time until the mixture reaches a drizzling consistency.

    Cut grilling cheese into four large slices. Place on a plate; season all over with the remaining shawarma spice blend , salt, and pepper. (Do not worry if all the spice does not stick.) Shake off any overflow.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add the seasoned grilling cheese and cook until browned, ⏱️ 2 minutes per side.

    Fluff the cooked basmati rice with a fork, and season with salt and pepper. Divide the rice into bowls. Top with the salad and the cheese. Drizzle the cheese with the garlicky white sauce and hot sauce to taste. Sprinkle with the remaining pistachios. Serve with lemon wedges on the side.
